major shopping trip!

costco. i love how they have so many good vegan staples. and vegan junk foods too. they offer vegan pie and candy and frozen convenience foods, and they're beginning to get more and more vegan options as our culture changes to demand more plant based foods for health and environmental reasons.

so heres what i got:

this should keep me for a long long while. ( i hadn't gone shopping in forever. i've been going out to eat for the past month.)
i still have bread, corn tortillas, misc beans and lentils. white rice, popcorn, sauerkraut, yerba mate, coffee, carrots, celery, red cabbage, yellow squash, salad mix, miso, kombucha, and seaweeds. and some other misc. dry foods. i just want to get more flaxseed oil, or flaxseeds to grind up for my smoothies. and soygurt. but i may or may not get them. its about convenience. oh yeah, and i have pancake mix, i need syrup though.

ramen, rice, smoothie, tofu parm, malt o meal

breakfast: pot of yerba mate tea. b12 dot. oriental flavored ramen (top ramen brand, NOT maruchan) (heated water to boil with chopped onion, wakame, kombu, and dulse pieces, ms. dash. then added noodles oriental flavor packet and miso paste) served with mixed veggies warmed from a can.

coffee. another b12 dot. earl grey tea (i was trying to work at home, and worried i would feel distracted)

pepperocinis
brown rice with mushrooms, celery, and red cabbage. spinach. hot chili and soy sauce. ate a carrot while waiting for that to cook. vitamin.

strawberry and peach smoothie. (fruit and water. it was flavorful enough like that)

tofu parm my room mate baked. it was good. she breaded it with a nutritional yeast and flour and spices then baked it with pasta sauce.

made some breakfast food for dessert: malt of meal with himalayan pink salt and maple syrup.

i also went grocery shopping today. picked up some (doble fibra mexican brand wheat) bread, corn tortillas, canned turnip greens, canned asparagus. it was less than 10 bucks.

potatoes, squash, corn, broccoli, pizza, mushroom rice

breakfast potatoes. with spaghetti squash. warm bread roll with margarine. 

veggie dog. ritz crackers.
cinnamon candied almonds. dried apricots. chocolate. apple. 

corn on the cob with olive oil marjoram and oregano. garlic powder. sauteed broccoli and carrots. sun chips.  wine. pizza from stephanies bakery.

went shopping: 2 eggplant, 2 zucchini, onion, acorn squash, celery, bananas, nectarines, plums, canned olives, white button mushrooms, portobello mushrooms.  $15

ate a banana. sauteed 6 sliced button mushrooms til they began to carmelize and stuff. fried up some leftover rice with split pea stuff with like 4 cloves of garlic. ate that for dinner.

pancakes and grapefruit. green tea.

split pea mash with turnips and carrots over rice (leftover pumpkin seed stuff). yam. tea.

made a pot pie. forgot to take pictures. but you mix flour with margarine and dill and garlic salt til smooth, then add water until its dough consistency. add flour if its too wet. roll out 2 pie sized pieces, for top and bottom. boil a couple diced potatoes. fry some spinach with carrots and french style green beans and garlic and onion italian seasoning. preheat oven to 350. press dough into bottom of pie dish. prebake only dish with bottom dough for 15 minutes. mash potatoes, mix with vegetables, add water to smooth creamy consistency. add salt and pepper and spices to taste. fill pie dish and pack cooked lentils on top of the potato mixture. cover with other dough piece like a pie. cut a hole on top. bake until dough is done. i didn't make or buy any gravy. i just ate it out of the pie pan with some flax seed oil. it was really really good!

then i ate ritz crackers til my stomach wanted to blow up

grapefruit, curried rice and yam, "chicken" chipotle sandwich with guac

grapefruit. tea. banana. frijodilla made with mashed kidney beans between 2 oiled corn tortillas, fried. good. 

yams. more curried rice with vegetables: broccoli, kale, carrots, onions, etc. flax seed oil added.

chai tea.

spicy "chicken" chipotle sandwich with guacamole (vegan seitan pattie) from natures express by balboa park! sooooooooooooooooooo good. also got a raw burger. never tried it before. its a dehydrated hunk of seasoned veggies and nuts and seeds, topped with a nut cheese, tomato, onions, sprouts, served in a cabbage leaf. its pretty good too. and then i had a chocolate chip cookie.

fruit and stuff, tator tots and broccoli, mac n cheez casserole squash

dried apricots, tortilla chips fire roasted salsa.

tator tots, cocktail sauce, garlic sesame broccoli. pan fried plantains. carrot juice. acai blueberry juice, vitamin water. oreos. strawberry. fresh white button mushrooms. chocolate. pepperocinis

macaroni and cheez casserole with collards and toasted corn on top. with acorn squash and pepper and flax seed oil and a salad with raspberry vinegarette. lemon mini pie. yerba mate tea. v8. vitamins.
i used nutritional yeast for the cheesy sauce. to make the cheezy sauce:
1/2 cup flour, 1/2 cup nutritional yeast. tsp salt. i used some of that chicken seasoning you see in the picture. its salt, paprika, garlic, and onion.  i used a couple teaspoons of that. 

mix up dry ingredients. then add 2 cups of water. i used vegetable broth. mix well, add fresh onion and garlic if you have it. turn on heat to medium, and whisk until it begins to bubble and thicken. 
stir 30 more seconds. then add 1/4 cup 
margarine and 1 tsp dijon
 mustard. should be a kinda thick cheezy sauce. put in a casserole dish add cooked noodles, cover with frozen greens and ground tortillas or bread. broil 10 minutes or until top is toasting brown.

i use the nutritional yeast sauce for grilled cheese or quesodillas too. each recipe makes about 2 1/2 cups of cheezy sauce.

went to whole foods. bought soyogurt, nutritional yeast and flax seed oil. $30 ($20 for the flax seed oil, 3.69 for the soygurt, 3.20 for the nutritional yeast)

then to the local food market for potatoes and mini fruit pies (lemon and cherry) $3.27

Dinner used one of the seasoning mahatma rice packets, in a rice cooker i put 1 grated carrot, some onion, diced garlic, chopped mushroom, margarine. 


baked acorn squash til soft. served squash with fluffed rice cooker stuff serve with salad and bac-o's (totally vegan!) top with ground walnuts. also snacked on ginger snaps. bac-o's. and stuff.

toast, pizza, pb&J, tortillas, hummus, pancakes

finished off the last of the cream o wheat i cooked yesterday. ate a slice of pizza. toasted some cinnamon raisin bread. ate 1 piece with jam. drank some kombucha

packed lunch:
sauteed diced mustard greens with collard greens and squash and garlic. put on top of a few pieces of leftover pizza. yum.

lunch i got from a mexican food restaurant near work: bean plate and fries and a sprite. bean plate has seasoned rice, beans, burrito tortilla with beans, salsa fresca, lettuce, tomato, guacamole.  usually dont drink soda or eat fries. felt kinda heavy.

dinner: papa johns pizza. onions, olives, roma tomatoes. extra garlic sauce, and pepperocinis. fried up some garlic collard greens.

snacks all day. zucchini pasta at night.

visited the relatives today. so i ate a bunch of nonsense:

about 1 1/2 packages of ritz crackers dipped into chopped avocado. a few prunes. an apple. a banana. apricot juice. tortilla chips and salsa. orange.
canned bean chili with green chilis added cause it wasn't spicy enough. cranberry juice. dried apricots. candied cinnamon almonds... that might be it.

got home and dumped a can of mushroom pasta sauce into a pot on medium heat. chopped like 5 cloves of garlic and dumped maybe a 1/2 cup of oil into the sauce with a cup or so of collard greens and 1 grated carrot. let that cook for a while. while i spiralized 4 zucchinis. the spiralizer is a kitchen utensil that turns vegetables around in a circle to cut them into noodles. i put the spiralizer on angelhair pasta setting. and put all 4 of the zucchinis into the pasta. yum. i'm going out tonight. so i'll have a few drinks.

tortilla, veggieburger, tomato soup

ran out of the house really fast, grabbed a flour tortilla and dipped it into garlic margarine sauce from papa johns.

had a veggieburger and fries and fruit punch for lunch

went shopping for food on the way home
bought jicama, frozen spinach, frozen french style green beans, corn tortillas, carrots, can tomato soup. $13 then went to the Panchitas bakery in golden hill, and got some bread rolls, 10 for $2

for dinner i made tomato soup, adding corn and garlic. sauteed some green beans, and ate that with a couple bread rolls.

cereal, PB&J, corn and broccoli stuff with salad and bagguette

had some cereal this morning (grape nuts), and some of those peanut butter cookies i made last week. i mad so many cookies its insane. i should take more to work to share. yeah. also had some kombucha and some apple juice, and a vitamin.

packed a peanut butter and grape jelly sandwich on cinnamon raisin bread for lunch, with some cookies, and some seasoned mustard greens (from a can). the mustard greens were really good. and then i was thinking about how i bought the can for about 79 cents, but i have several mature mustard green plants in my garden, but i'm too lazy to harvest the greens and season them. but i think i might now that i've tasted the canned ones.

dinner
took a cast iron pot threw in some canola oil and frozen broccoli and cauliflower, and some diced garlic. then added frozen corn and mango salsa. let that cook for a while. added some more oil when needed. served with a salad with raspberry walnut vinaigrette, bread and soy milk (cause i was craving it). also cooking lentils to eat. they're not done yet.

today i was off work. and i got up super early in the morning to take the amtrak train up to los angeles. so i mostly ate train food.

i got a banana, an oatmeal raisin odwalla bar, a cranberry juice. for lunch i had a vegan gardenburger from the amtrak cafe. they changed the recipe on their veggie burgers. they're very good now. they've got mushrooms and walnuts and stuff. so i ate one of those.

ate another banana. a heart shaped apple bar thing, a muffin. soy latte. blue corn chips.

on the train back home i had another vegan gardenburger and some wine. cookies for dessert.

oatmeal burrito torta cookies

went shopping last night. bought Oatmeal, Grape nuts cereal, soymilk, more B12 sublingual vitamins, apple juice, strawberries, walnuts... i think that was it.

breakfast: oatmeal and grape nuts cereal mixed together. oat nuts? grape meal? with soymilk and vanilla sugar on top.

on my way home i visited the hubby at work, raided his work fridge, ate a peanut butter and apple butter sandwich.

for dinner we had garlic stuffed artichoke, mashed lentils with leftover squash, salad with walnuts and strawberries.

i only ate one meal today. i was really busy. so i drank yerba mate tea and snacked on chips and hummus all day. ate a salad. PB&J. then more chips and salsa. then went out for a burrito with grilled bell pepper and zucchini and yellow squash. lots of salsa and black beans.

cinnamon raison toast w/jam collards and chickpeas, "chicken" chipotle sandwich

2 pieces of toasted cinnamon raisin bread (ezekiel 4:9) with grape jam. i boiled a little water and mixed both malt-o-meal and grits to make a sort of porridge. ate 2 white button mushrooms while preparing my lunch for later. popped a vitamin, then left for work.

lunch: i had fried up some onions and cabbage and collard greens and red and green bell peppers and chickpeas til they began to brown. really good. also ate an orange.

went out for dinner. Natures Express drive thru (5th and quince, san diego). spicy "chicken" chipotle sandwich. sooooo good. its fake chicken breaded and fried like a normal fast food chicken sandwich/burger, comes with a veganaise chipotle sauce, all vegan (i love san diego). drank a passionfruit kombucha.
went out for drinks: mimosa, burbon and ginger ale
late night snack: dolmas, bread and salsa, salad

no work today, i went to visit relatives, so i snacked all day:

more and more and more dolmas and sesame bread until my stomach felt like it was going to burst.

pancakes, curried rice w/yam and corn, enchiladas n mashed squash n turnip



breakfast: pancakes (recipe below), leftover fig malt-o-meal. yerba mate tea.
snack: apple
lunch: curried jasmine rice with mashed yam and corn. orange juice. apple and coffee. a few pieces of chocolate
dinner: (pictured right) butternut squash and turnip mash, enchiladas with garlic cashew sauce (recipe below). yerba mate tea again. later i enjoyed some beer: india pale ale, and the rest of the chocolate bar.

instant pancakes: 2.5 cups flour. 1/4 cup sugar. 3 tsp baking powder. 1/2 tsp baking soda. 1 tsp salt. add cinnamon, allspice, ginger, nutmeg. mix with water to make pancakes. i have a jar of this dry mix next to the stove. when i want a pancake I take a bowl and add a couple tablespoons of the pancake mix with water. will keep forever. not really. but kinda.

enchiladas in picture: can black beans, chopped 1/2 onion, 2 handfuls of sliced mushrooms, 6 cloves garlic sliced, can diced tomatoes, can green enchilada sauce, a handful of cashews, a few de-stemmed sliced collard leaves, corn tortillas, oil.
in some oil fry onions til they turn translucent, add tomatoes, let simmer 5 min, add 1/2 the garlic, and collards and mushrooms. cover let simmer 5 min. mix well remove from heat mix with can beans. oil baking device (i used cast iron pan) take tortillas and fill with mix, roll over upside down til entire pan is filled with filled tortillas. cover with enchilada sauce. take your cashews and blend them til they're a powdery or smooth. add a few tablespoons of oil. blend well, add the rest of the garlic and a few tablespoons of water. blend til it lightens in color and appears creamy. garlic sauce is done. drizzle over enchiladas. bake or broil til top looks toasty and bubbly on sides of baking dish.

malt-o-meal, lentil tacos, macaroni

this morning, i put water to boil. took 2 figs out of the freezer, and diced them up. added them to the water. made myself some fig malt-o-meal. ate some sunflower seeds. drank matcha green tea 

when i got to work, i had a coffee.

for lunch i had 3 lentil tacos (brought from home. just seasoned (parsley, garlic salt, cayenne oil) mashed lentils and corn tortillas), a burrito filled with spanish rice and guacamole (ordered from a vegan friendly mexican restaurant near work), a carrot, 2 clementine oranges. 3 pieces of dark chocolate off the bar i bought today. more green tea.

dinner, macaroni. 
i save my cooking water when i boil vegetables. i had a jar in the fridge of boil water for the squash i made the other day. so to make a sauce to go over the macaroni, i took some of the vegetable broth/cooking water and added a few tablespoons of lentils, 1 diced garlic clove, 1/4 diced onion, pepper, paprika, and salt in a pot. let that simmer til the onions were cooked. mixed in some vegetable oil. like ratio of 1:1 broth to oil. poured that over the macaroni with peas and carrots (from freezer). also had a salad. with buttercrunch and romaine lettuce. 1 piece of chocolate.
