potato flautas, inari sushi moshi/daifuku, eggplant stir fry, pineapple upside down cake, etc

i know its been a while
we've been way into pies. pot pies, shepards pies, chocolate mouse pies, banana creme pies. and just last night we made an upside down cake with box cake mix and canned pineapple. (easy substitution baking powder and baking soda instead of egg). made a whipped vanilla frosting
kombucha, breakfast fried potatoes with quinoa and rosemary. eaten with katchup and serracha
home grown eggplant, stir fried with shitake, zucchini, basil, onion, garlic, quinoa, grated carrot all wrapped up in a burrito
went to mitsua japanese market and bought some snacks (and groceries)
went to pokez mexican restaurant and ordered potato flautas with rice and beans, guac, all the fixins.
coffee with a spot of soymilk

yesterday had spaghetti with marinara sauce (with frozen veggies and lots of seasonings and garlic - those marinara jars are never flavorful enough for me)
yam baked in the toaster oven (my husband likes margarine on his, i dont)
pot pie with potato, mustard greens, carrots, peas, green beans, corn, garlic, onion, nutritional yeast, a layer of quinoa (cause i'm quinoa crazy lately), gravy, carmelized red cabbage, etc etc etc turned out really good!
what else lately...

tofu sandwich on focaccia bread with spicy veganaise, spring mix, tomatoes, onions, balsalmic glaze (from influx cafe)
orange
brown rice and nori seaweed
oatmeal with mixed berries, chia seeds, maple syrup
salted almonds
miso soup with wakame and garlic mashed potatoes
collard green and king trumpet mushroom stir fry with hot peppers and basil...
yeah thats a couple days worth of meals.
